Komugino raises ¥360m to grow its restaurant-brand group
The financing supports a business combining regional restaurant renewal with new formats and franchise expansion.
Two routes to a larger restaurant group
Komugino acquired the Uchidaya udon chain in March 2025 and began updating stores with revised layouts, menus, touch-panel ordering and cashless payment. The work gives an established regional brand a store format intended for wider rollout.
Gyutan no Lemon joined the group in April 2026. Its thick-cut beef-tongue restaurants add a different growth route: a newer brand with a strong visitor following and outlets extending from major Japanese cities to Taipei.
The group’s franchise experience began with Komugi no Dorei bakeries, using factory-supplied frozen dough to simplify store operation. That operating base now supports a wider collection of food brands.
