Komugino
Japan · Foodtech
Komugino develops, operates and franchises restaurant and bakery brands, combining new store formats with the renewal of established regional businesses.
A shared operating model for food brands
Komugino grew from the Komugi no Dorei bakery franchise, where centrally supplied frozen dough supports repeatable store operations. It applies its experience in franchising and multi-site management to a broader group of food businesses.
The group combines acquisitions and brand development with direct operation and franchise expansion. It also helps other businesses design franchise packages and recruit operators.
Regional brands with a wider reach
Its portfolio includes Uchidaya, a long-established Hakata udon chain, and Gyutan no Lemon, a restaurant brand specialising in thick-cut grilled beef tongue. Renovation, menu changes and updated ordering and payment systems form part of its work on existing stores.
The Tokyo-based company also works across bakery, soba and other Japanese restaurant formats, using shared headquarters and operating capabilities to support multiple brands.
