Kinish develops rice-based foods and the technology for producing dairy proteins in plants. Its commercial brand, The Rice Creamery, sells frozen desserts made with conventional rice in Japan and the United States.

Alongside that business, the Tokyo company is researching rice that expresses casein and compact rice varieties suited to controlled-environment farming. These development programmes aim to supply ingredients for future dairy alternatives; the current frozen desserts use ordinary field-grown rice.
